Sweet Potato Brownies.

Once in awhile I bake for myself (usually it’s for other people)

With a cooked sweet potato …I put my baking skills to the test.




One cooked and peeled yam (sweet potatoes are actually white)

1/3 cup brown sugar

2 organic eggs

2/3 cup unsweetened cocoa powder

2 tablespoons extra virgin olive oil

1/4 cup pumpkin or pumpkin butter

1/2 teaspoon xanthum gum powder

1/2 teaspoon baking powder

1/2 teaspoon baking soda


Mix well. It’s helpful to pulse cooked and skinned yam in a magic bullet or blender.

Bake for 22-25 minutes at 350.

And, you have the best brownies. Ever. I could even eat them for breakfast.
